Healthy Low Carb Keto Vegetable Recipe (Broccoli Cheese Bites)

Do you like broccoli? I LOVE, seriously love broccoli. Favorite way to eat it? Steamed, served with a little mayo.

If you are in the not-so-sure-about-broccoli camp or are cooking for someone who needs to eat more vegetables but is less than enthused at the prospect, this is the recipe for you.

Ingredients

  • 2 heads Broccoli
  • 1/2 cup frozen spinach defrosted and drained well
  • 1/4 cup Scallions sliced
  • 1 Lemon Zest only
  • 1 cup Cheddar Cheese grated
  • 1/4 cup Parmesan cheese grated
  • 2 eggs
  • 1/3 cup Sour Cream
  • 1/2 teaspoon Pepper
  • 1/4 teaspoon Salt

Instructions

  1. Preheat fan forced oven to 180C/355F.
  2. Cut broccoli into evenly sized florets and place in a microwave-safe container with ¼ cup of water. Microwave on high for 3 minutes or until the broccoli is tender. Drain well and allow to cool.
  3. Chop the broccoli into very small pieces, You should end up with approximately 2-2 ½ cups.
  4. Place the chopped broccoli in a bowl with all the remaining ingredients and mix well.
  5. Pour the mixture into an 11 x 7in rectangle brownie pan, lined with parchment paper, and smooth into an even layer.
  6. Bake for 25 minutes, until the bites are puffed and browning.
  7. Allow cooling for 10 minutes, before cutting into 24 squares.
